Dit is een grote verandering als men bedenkt dat 90% van de chocoladetablettenmarkt bestaat uit couverturechocolade (chocolade die bij grote producenten wordt gekocht en door de fabrikanten in een vorm wordt gegoten).<\/p>\n<h3 class=\"p4\">Maar wat maakt het verschil in onze benadering van de relatie met producenten?<\/h3>\n<p class=\"p3\">We staan in rechtstreeks contact met de producenten. Daardoor kunnen we hen een billijke beloning en betere arbeidsomstandigheden garanderen.<\/p>\n<blockquote>\n<p class=\"p5\"><i>&#8220;De vorige tussenpersonen konden ons alleen maar ontwijkende antwoorden op onze vragen geven. Toen kwamen we op het idee om cacaobonen rechtstreeks bij de producenten te kopen en zo beter traceerbaar te zijn. <\/i><\/p>\n<\/blockquote>\n<p class=\"p3\">In totaal werken we samen met een veertigtal producentenfamilies die van ons het hele jaar door een vaste prijs ontvangen, zodat hun families beschermd zijn tegen speculatie door de grote cacaohandelaars.<\/p>\n<p class=\"p3\">Anderzijds hebben we ervoor gekozen onze producenten meer te betalen dan de in de regio toegepaste normen voor eerlijke handel.<\/p>\n<p class=\"p3\">Een correcte betaling van de producenten geeft hun stabiliteit, maar ook de mogelijkheid om niet alleen de oudste zoon naar school te sturen&#8230; Het is ook een motiverende factor voor de plaatselijke jeugd.<\/p>\n<p>[\/vc_column_text][vc_column_text]<\/p>\n<h2 style=\"text-align: center;\">Hoe wordt Nao chocolade gemaakt ?<\/h2>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;7675&#8243; img_size=&#8221;120&#215;120&#8243; alignment=&#8221;center&#8221; css_animation=&#8221;fadeIn&#8221;][vc_column_text]<\/p>\n<h2 class=\"p1\" style=\"text-align: center;\">1. Oogsten<\/h2>\n<p class=\"p2\">Eerst worden de cacaovruchten geoogst, meestal twee keer per jaar. Gisten<\/h2>\n<p class=\"p2\">De pulp (bonen) fermenteert gedurende vijf tot zeven dagen. Concheren<\/h2>\n<p class=\"p2\">Nu volgt het concheren, een zeer langdurig proces waarbij de temperatuur van de chocolade verschillende keren wordt verhoogd en verlaagd terwijl hij wordt &#8220;gemixt&#8221;. Ook dit is een zeer belangrijke stap om ervoor te zorgen dat de uiteindelijke textuur precies is zoals wij die willen. De boeren zijn gevestigd langs de Maranon en Utcubamba rivieren in de provincies Bagua en Utcumbamba.<\/p>\n<p>Dankzij investeringen in cacao, goede landbouw- en naoogstpraktijken, vindt eersteklas cacao uit het Amazonas departement zijn weg naar chocolademakers over de hele wereld.<\/p>\n<p>Cacao uit het Amazonegebied heeft onlangs de status van oorsprongsbenaming gekregen.<\/p>\n<h4>Duurzame chocolade&#8230;<\/h4>\n<p>De gemeenschappen in het Amazonegebied leven tamelijk ge\u00efsoleerd van stedelijke gebieden en verbouwen hun cacao traditioneel met behulp van agroforestrymethoden. Boeren komen hier om het product van hun oogst te deponeren, dat vervolgens met veel zorg en aandacht voor detail wordt gefermenteerd en gedroogd.
